Banana Nut Date Bars

Hmm, bananas and nuts. They should be called crazy bars.

Ingredients

  • 1/2 cup raw honey
  • 1/4 cup canola oil
  • 1/4 cup egg whites or 1 egg
  • 1 tsp vanilla extract
  • 1 ripened banana, mashed
  • 2 tbs coconut oil
  • 3 cups nut flour (almond, walnut, pecan, etc)
  • 1 tsp baking soda
  • pinch of salt
  • 1 cup deglet noor dates, chopped
  • 1/2 cup walnuts, chopped

Directions

  1. Preheat oven to 350 degrees F.
  2. Oil a 9"x13" baking dish.
  3. Mix all ingredients well in a bowl with a spatula until all the dry ingredients are moistened.
  4. Pour batter into the baking dish and spread into an even layer along the bottom of the dish.
  5. Bake for 25-28 minutes until edges are lightly browned and when a knife inserted into the center comes out clean.
  6. Allow to cool in the dish for 30 minutes. Cut into 15 3"x2" rectangles.
  7. Store bars in a refrigerated sealed container.

Makes 15 bars.
