Hmm, bananas and nuts. They should be called crazy bars.
Ingredients
- 1/2 cup raw honey
- 1/4 cup canola oil
- 1/4 cup egg whites or 1 egg
- 1 tsp vanilla extract
- 1 ripened banana, mashed
- 2 tbs coconut oil
- 3 cups nut flour (almond, walnut, pecan, etc)
- 1 tsp baking soda
- pinch of salt
- 1 cup deglet noor dates, chopped
- 1/2 cup walnuts, chopped
Directions
- Preheat oven to 350 degrees F.
- Oil a 9"x13" baking dish.
- Mix all ingredients well in a bowl with a spatula
until all the dry ingredients are moistened.
- Pour batter into the baking dish and spread into an even layer along the bottom of the dish.
- Bake for 25-28 minutes until edges are lightly browned and when a knife inserted into the center comes out clean.
- Allow to cool in the dish for 30 minutes. Cut into 15 3"x2" rectangles.
- Store bars in a refrigerated sealed container.
Makes 15 bars.
