If you're making enchiladas, just omit the honey. You won't want them to be sweet if your dish is going savory. Enjoy!

Is there something else I could use instead of honey? Besides that I'm very excited to try these for an enchilada recipe I have.

These really work well. I experienced the same effect with these as with "regular" crepes - the first one of the batch never quite turns out right like the rest. I took these a savory direction, filling with sauteed mushrooms, ham, and a soft cheddar. For bonus French-ish points, a blanched asparagus salad with pesto was served on the side.

Also - leftovers stored and reheated very well!

As a former Cincinnatian, I am intrigued by the recipe - I'll have to make it and see how it checks out!

Paleo-friendly serving suggestions, since spaghetti just won't do:
-Serve chili underneath a salad of crisp lettuce (romaine/iceberg blend) with tomato, black olives, and finely shredded cheddar
-In a bowl over 1-2 hot dogs (essentially a 'bunless coney'), with finely shredded cheddar - suggest yellow mustard and chopped raw onion for authenticity
-The closest thing to a Paleo '3-way' (the chili kind...) is probably to serve it over cauliflower rice with cheese. '4-way' would add raw onion.

Thanks Jen, I just fixed the recipe. It's only a teaspoon per batch. Glad you enjoyed them!

Hi...just made these crepes--they had great flavor! I do have a question though...how much honey is supposed to be in them if any? Honey is described in step one, but not in the ingredient list. Thank you!

Certainly, the chia will 'gel' the milk a bit if you let it sit for 10 minutes or so. Depending on your pref, that might be a good thing.

The honey does help hold it together because of its syrup qualities. But since apples have a sugary juice and natural pectin inside them, I would imagine those would be enough to hold the dessert together. So, as long as you use liquid stevia, it should be very successful.
